After your guided tour of Coxtie Green Farm, illustrating ethical and regenerative farming practices, we'll dive deep into how our butchery operates and why we dry-age our beef here at Thomas Joseph. After some in depth discussion, it's time to show you where it all comes from. We will display a side of beef, showing where all of our favourite cuts come from before breaking down the crown jewels - the rump, loin and rib section. Our Butchers will demonstrate where all your favourite steaks come from with some student participation and then it will be down to you to cut, trim and tie your very own two bone rib of beef to take home!
