Arouquesa — a native Portuguese mountain breed from the Arouca region in the north, and one of the rarest things we have ever had through the door.\u003c\/p\u003e\n\u003cp\u003eThese are small, hardy cattle that have worked those hills for centuries, grazing rough upland pasture and scrub on small family holdings. Slow growing, long living, and kept in numbers that make commercial production impossible. It is a breed held in high regard in Portugal and almost never seen anywhere else.\u003c\/p\u003e\n\u003cp\u003eThe meat is finely marbled, deeply coloured and genuinely distinctive — the product of slow growth on poor ground rather than anything forced. Eighty days of dry-ageing takes it somewhere else entirely: concentrated, nutty, with that proper aged funk and a texture that gives way completely.
