Woodland reared Duroc cross pork from Youngs Farm at Sankence in North Norfolk — a fourth generation family farm now run by former England and Lions hooker Tom Youngs alongside his cousin George.\u003c\/p\u003e\n\u003cp\u003eAround a hundred pigs live out in the woods on the estate, rooting about in the leaf litter and doing exactly what pigs should be doing, then finished on wheat and barley grown in the fields right next to them. Slow grown, properly outdoors, and a fraction of the volume of anything commercial.\u003c\/p\u003e\n\u003cp\u003eThe Duroc cross is the bit that makes it sing — darker meat, serious marbling, and it holds onto its moisture instead of shrinking away in the pan. Add the woodland diet on top and you get pork with a depth of flavour most people have never actually tasted.
