Iberico Pork
Iberico pork comes from Spain's prized Pata Negra pigs, reared free-range and finished on a diet of acorns (bellota) in the oak forests of western Spain. The result is richly marbled, deeply flavoured pork unlike anything else — often called the "Wagyu of pork".
Our range includes the famously tender secreto, show-stopping pork tomahawks, and richly seasoned Iberico sausages — all sourced with the same care for provenance and welfare as everything at Thomas Joseph Butchery, and delivered nationwide.
