Since the last century, Willem & Sara Maters have resided in the beautiful south Cambridgeshire countryside on a smallholding with their own beehives, livestock and a wide range of organic fruit and vegetables. Their daughter Kate inherited this passion for healthy and natural living and founded Maters & Co on the same principles — raw, natural goodness of the highest quality.
Every honey in the range is completely unfiltered and unpasteurised, left in its natural state so each variety retains its unique, nuanced flavour. The variety names reflect the type of flower or plant the bees were feeding on, or the season and area of harvest — never infused, never artificially flavoured, 100% pure. Once sampled, it is impossible to go back to regular supermarket honey.

What is raw honey?
Raw honey is honey that has not been heated above the natural temperature of a beehive (around 35°C) and has not been finely filtered. Most commercial supermarket honey is pasteurised — heated to high temperatures to prevent crystallisation and extend shelf life — which destroys the natural enzymes, pollen, propolis and complex flavour compounds. Raw honey retains all of these, which is why it tastes so dramatically different and has far greater nutritional value.
Why does raw honey crystallise?
Crystallisation is a completely natural process and a sign that your honey is genuinely raw and unprocessed — it is not a sign of spoilage or poor quality. All raw honey will eventually crystallise depending on its floral source and storage temperature. To return it to a liquid state, simply place the jar in a bowl of warm (not boiling) water and stir gently. Never microwave honey — it destroys the enzymes and flavour compounds that make raw honey special.
How do the varieties differ?
Each variety reflects the floral source the bees were foraging on, the season and the region of harvest. Scottish Heather honey is robust, complex and slightly bitter — one of the most distinctive honeys in the world. Wildflower varieties are gentler and more rounded, with flavour that varies with the season. The names on each variety describe the source — no flavourings are ever added.
How should I store it?
Store at room temperature, away from direct sunlight. Do not refrigerate — cold temperatures accelerate crystallisation. Raw honey has an almost indefinite shelf life if kept properly sealed. Archaeologists have found 3,000-year-old honey in Egyptian tombs that was still edible.

Our team will get your order ready 24 hours before the date requested at checkout. Everything will be cut fresh, packaged with the utmost care by our team and then boxed with ice packs in our sustainable packaging, ready to be delivered Next Day.
Your order will be sent via DPD to the postal address given, on the day of delivery DPD will send you a one hour timeslot for when their driver will drop off to your location. The driver will leave safe if you are not in so the box can be left outside until you arrive back home.
Our cool boxes maintain the right ambient temperature for up to 48 hours so your box will always arrive fresh and chilled.
