How do I roast a whole head of garlic?
Slice the top off a whole head to expose the cloves, drizzle generously with olive oil and season with sea salt. Wrap in foil or place in a small baking dish and roast at 180°C for 40–50 minutes until the cloves are completely soft and golden. Squeeze the roasted garlic directly out of the skins — it becomes sweet, mellow and spreadable. Use stirred through mashed potato, spread on bread, mixed into butter or as a base for a sauce.
What's the difference between raw and roasted garlic?
Raw garlic is pungent, sharp and intensely flavoured — a little goes a long way. Roasted garlic is sweet, mellow and nutty — the heat converts the harsh compounds into something completely different. Both are useful in the kitchen but for completely different purposes. Raw for dressings, marinades and dishes where you want punch; roasted for a sweeter, more complex depth in sauces, soups and sides.
How do I make garlic confit?
Place peeled garlic cloves in a small saucepan and cover completely with olive oil. Cook over the lowest possible heat for 45–60 minutes until the cloves are completely tender and pale golden — they should never bubble aggressively. Store cloves and oil together in a sealed jar in the fridge for up to 2 weeks. Use the cloves whole in dishes and the oil as a supremely flavoursome cooking oil.
How should I store it?
Store in a cool, dry, dark place with good air circulation — a mesh bag or open bowl in a cupboard. Never refrigerate whole garlic as the cold and humidity cause it to sprout and go mouldy. Properly stored, it will keep for several weeks. Once a bulb is broken, use individual cloves within a week.
