What does Baron Bigod taste like?
Warm and milky at the centre, with earthy mushroom and subtle farmyard notes from the bloomy rind, and a delicate nutty finish. As it matures it becomes more liquid and intensely flavoured — the centre approaching a near-molten consistency at peak ripeness. It's complex without being aggressive, and one of the most characterful British cheeses available.
What makes it different from standard Brie?
Almost everything. Baron Bigod is made from raw milk — unpasteurised and used warm from the morning milking — which produces a far more complex flavour than pasteurised Brie. It's also a true farmhouse cheese, made by hand on a single farm in Suffolk rather than industrially. The Montbéliarde cows produce rich, high-protein milk that gives the cheese an extraordinary depth standard Brie simply can't match.
When should I serve it?
At peak ripeness — when the paste feels almost liquid and yielding when you press the rind gently. Remove from the fridge 60 minutes before serving. Excellent on a board with sourdough, walnut bread, grapes and chutney. Pairs brilliantly with Champagne, a light Pinot Noir or a dry cider. Also outstanding baked whole in its box at 180°C for 15–20 minutes until molten — serve with crusty bread for dipping.

Your order will be sent via DPD to the postal address given, on the day of delivery DPD will send you a one hour timeslot for when their driver will drop off to your location. The driver will leave safe if you are not in so the box can be left outside until you arrive back home.
