Produced at the Colston Bassett Dairy in Nottinghamshire — a cooperative set up in 1913 and still owned by local residents and the farmers who supply the milk — this particular Stilton is made to a unique recipe developed exclusively for Neal's Yard Dairy. Head cheesemaker Billy Kevan uses animal rennet and hand-ladled curds, resulting in a buttery, silky cheese with an elegant sweetness and a long, complex finish.

Why is Colston Bassett Stilton considered the best?

Two things set it apart: the hand-ladling of curds (which most Stilton producers have mechanised) and the exclusive recipe developed with Neal's Yard Dairy using animal rennet. Hand-ladling creates a smoother, denser, creamier paste. Animal rennet produces a longer, more complex flavour. The result is a Stilton that's noticeably more refined — buttery and silky where standard Stilton can be crumbly and sharp.

Is it suitable for people who don't like blue cheese?

This is genuinely the blue to convert blue-cheese sceptics. It's far gentler, sweeter and more balanced than a typical Stilton — no aggressive sharpness, no overwhelming funk. The blue veining is delicate rather than dominant. Many people who claim to dislike blue cheese find they love Colston Bassett Stilton once they try it.

How should I serve it?

Remove from the fridge 45–60 minutes before serving. Excellent on a board with Verduijn's Fine Biscuits, walnut bread, quince paste and pears. Classically paired with a glass of port or a sweet Sauternes. Also outstanding crumbled into a salad with candied walnuts and pear, or melted into a sauce for steak.

How long will it keep?

Keep refrigerated and consume within 5–7 days of delivery for optimum flavour. Wrap in wax paper rather than cling film. If you see any additional surface mould develop, simply scrape it off — it won't affect the flavour of the cheese inside.
