Our Comté is matured by the legendary Marcel Petite at Fort Saint Antoine — a vast 19th-century fort in the Jura mountains of eastern France, where over 100,000 wheels of Comté are aged at any one time. Made in the Franche-Comté region from the milk of Montbéliarde cows, this is one of the world's great hard cheeses: creamy in texture with occasional amino acid crystals, and a flavour that ranges from sweet and nutty through to savoury, vegetal and deeply complex.

The fort's consistent temperature and humidity make it one of the world's great cheese-ageing environments.

How should I use Comté?

Exceptional on a cheeseboard — serve at room temperature alongside charcuterie, walnuts and good bread. Outstanding melted: the gold standard for French onion soup, croque monsieur or a gratin dauphinois. Grated over pasta or risotto as an alternative to Parmesan. Pairs brilliantly with white Burgundy, Jura whites or a light Pinot Noir.

How should I store it?

Wrap in wax paper or cheese paper and refrigerate. Keeps well for 2–3 weeks once cut. Bring to room temperature for 30–45 minutes before serving to allow the full flavour profile to open up.
