Matured for a minimum of 6 months, it develops its characteristic firm, buttery texture and a complex flavour profile — nutty and slightly tangy, with a clean, lingering finish. The distinctive herringbone rind pattern is immediately recognisable, and the pale ivory paste within delivers everything a great Manchego should.

What does Manchego cheese taste like?
Manchego has a firm, buttery texture with a flavour that's nutty and slightly tangy — becoming more complex and piquant with age. At 6 months (curado), it has a well-rounded, satisfying character. Not sharp or aggressive — it's one of the most crowd-pleasing cheeses on any board.
What is Manchego made from?
Authentic Manchego is made exclusively from the milk of Manchega sheep, a breed native to the La Mancha region of central Spain. It must be produced in the La Mancha region and carry DOP (Protected Designation of Origin) status — one of the most strictly controlled cheese designations in Europe.
What pairs well with Manchego?
Classically served with Marcona almonds, membrillo (quince paste) and jamón ibérico. On a board it works beautifully alongside cured meats, olives and good bread. Wine: a glass of Rioja, Tempranillo or dry sherry. Also excellent melted — try it in a quesadilla or grated over roasted vegetables.
How should I store it?
Wrap in wax paper or cheese paper and refrigerate. It will keep well for 2–3 weeks once cut. Bring to room temperature 30 minutes before serving to allow the full flavour to open up.
