Made by the Reade family at Sgriob-ruadh Farm on the Isle of Mull, this is one of Britain's most characterful hard cheeses. A hearty Scottish farmhouse cheddar made from raw cow's milk, clothbound and matured for 10–18 months, it has a firm, fondant-like texture that's slightly more compact than other cheddars. The flavour is bold and distinctive — juicy and zesty at times, deeply savoury and brothy at others, with a boozy, malty edge that comes from the cows' unique winter diet of draff, the fermented grain husks left over from nearby Tobermory Distillery.

Why does Isle of Mull Cheddar taste different?
The cows' winter diet is the key. The Reade family feeds their herd draff — fermented grain husks left over from production at nearby Tobermory Distillery. This gives the cheese a distinctive yeasty, malty and boozy edge you simply won't find in any other cheddar. Combined with raw milk, animal rennet and clothbound maturation, it's a cheese of remarkable individuality.
What does it taste like?
Bold and complex. The texture is firm and fondant-like — slightly more compact than other clothbound cheddars. Flavours range from juicy and zesty to deeply savoury and brothy, with a boozy, malty undercurrent. It's not a subtle cheese — it's one for people who want real character and a proper bite.
How should I serve it?
Bring to room temperature for at least 45 minutes. Exceptional on a board with good chutney, oatcakes and pickled walnuts. Also brilliant in cooking — melted over a gratin, stirred into a cheese sauce or grated over a tart. Pairs well with a peaty Scotch whisky, dry cider or a bold red wine.
How should I store it?
Wrap in wax paper and refrigerate. Keeps well for 2–3 weeks once cut. The clothbound maturation means it's robust — it won't deteriorate quickly.
