Made by Simon and Tim Jones on their farm near Alford in Lincolnshire, the Lincolnshire Poacher is one of Britain's most remarkable hard cheeses. Clothbound and matured for around 14–20 months, it occupies a unique position — somewhere between a West Country Cheddar and a French Comté. The texture is smooth and densely creamy, the flavour complex and shifting: rich, savoury and brothy at times, then long, sweet and almost pineapple-like, with real depth and a satisfying finish.

How is it made?
Made by Simon and Tim Jones at their farm near Alford in Lincolnshire, using milk from their own herd. The curd is clothbound — wrapped in cloth and rubbed with lard during ageing — and matured for 14–20 months. The result sits stylistically between a West Country clothbound cheddar and a French Comté, with characteristics of both but a character entirely its own.
How should I serve it?
Serve at room temperature alongside charcuterie, good bread and a sharp chutney. It holds its own on any cheeseboard but also works brilliantly in cooking — melted over a gratin, grated into a sauce or stirred through a risotto. Pairs well with a hoppy pale ale, dry cider or an unoaked Chardonnay.
How should I store it?
Wrap in wax paper or cheese paper and refrigerate. Keeps well for 2–3 weeks once cut. Bring to room temperature for 30–45 minutes before serving to let the flavour fully open up.
