What's the best way to cook brown mushrooms?

The key is high heat and not overcrowding the pan — mushrooms release water when cooked, and if overcrowded they steam rather than sauté. Heat a wide pan until very hot, add a knob of butter and a splash of oil, then add the mushrooms in a single layer. Don't stir for 2–3 minutes — let them colour. Add a crushed garlic clove and a sprig of thyme, season generously and cook for another 2–3 minutes until deeply golden. Finish with a squeeze of lemon.

How do I grill a Portobello mushroom?

Remove the stalk, brush generously with olive oil on both sides and season with salt and pepper. Place gill-side up under a hot grill for 5–6 minutes, then flip and grill for another 3–4 minutes. In the last 2 minutes, add a knob of butter, a crushed garlic clove and fresh thyme to the gill side and let it melt in. Outstanding as a vegetarian main or alongside steak.

Should I wash mushrooms?

No — mushrooms absorb water like a sponge, which prevents them from browning properly. Instead, brush off any dirt with a dry pastry brush or damp kitchen paper. If they're very muddy, a quick wipe under cold running water is fine — but dry them immediately and thoroughly before cooking.

How should I store them?

Keep in the fridge in a paper bag or the cardboard punnet they came in — never sealed in plastic, which traps moisture and accelerates deterioration. Use within 3–5 days. If they develop a slight sliminess, discard them.
