Made by Charlie Westhead at Neal's Yard Creamery in the Golden Valley of Herefordshire, Ragstone is one of Britain's finest soft goat's cheeses — and one of the originals that helped define the modern British artisan cheese movement. Named after Ragstone Ridge near Sevenoaks where Charlie first made it, it has been produced in Herefordshire since the Westheads moved there in 1996. Made with pasteurised goat's milk with a twist on the French Sainte Maure tradition — a white mould is added to develop the rind — Ragstone has a densely fudgy texture and lactic, lemony flavours reminiscent of crème fraîche. Minimum weight 200g.

What does Ragstone taste like?
Lactic, lemony and gently tangy with a densely fudgy texture — think crème fraîche in cheese form, with a clean, fresh acidity and a smooth, creamy finish. When young it's firmer with a bright citrus edge; as it matures it softens and becomes richer with more complex, rounded flavours. The thin mould rind adds a subtle earthy note.
Is it suitable if I don't usually like goat's cheese?
Ragstone is one of the most approachable goat's cheeses available — the lactic culture and white mould rind take the edge off any sharpness, producing a cheese that's creamy and gently flavoured rather than pungent or aggressive. It's an excellent starting point for anyone new to goat's cheese.
How should I serve it?
Slice and arrange on a board with honey, fresh figs, candied walnuts and good crackers. Crumble over a warm salad of roasted beetroot and hazelnuts. Spread on crostini with a drizzle of good olive oil. Or lightly grill slices until golden and serve warm. Pairs beautifully with a crisp Sauvignon Blanc, dry rosé or light Pinot Noir.
What are the spots of blue and green mould on the rind?
Perfectly normal and completely harmless. Ragstone has a thin mould rind, which means wild environmental moulds — blue, green or grey spots — sometimes develop on the surface during maturation, particularly in autumn. They don't affect the flavour or safety of the cheese. Simply scrape them off if you prefer, or eat them — they're safe either way.
