Made by Julie Cheyney in Norfolk from the raw milk of a single herd of British Friesian, Brown Swiss and Ayrshire cows, St Jude is a small, soft, mould-ripened cheese inspired by the French St Marcellin. Each cheese is made entirely by hand in small batches — the curd set slowly over 18 hours with as little intervention as possible, then hand-ladled into moulds and matured for 2–5 weeks. The result is a mousse-like, luxuriously light paste beneath a thin, wrinkled geotrichum rind, with flavours that shift beautifully with the seasons: fresh, citrusy and grassy when the cows are out to pasture; richer, more buttery and earthy in winter. Always with a delicate nutty finish from the rind. Around 95g per cheese.

What does St Jude taste like?
A gentle lemony acidity with a mousse-like texture that becomes softer and more intense as it ripens. In summer and spring: fresh, bright and grassy with citrus notes. What cheese is St Jude inspired by?
The French St Marcellin — a small, soft, mould-ripened lactic cheese from the Dauphiné region of France. St Jude is Julie Cheyney's own interpretation using raw British milk, resulting in a cheese that shares the style but has its own distinct seasonal character shaped by the Norfolk pastures.
How should I serve it?
Bring to room temperature for at least an hour before eating. At peak ripeness it will be almost liquid at the centre — spoon it out onto good bread. Pairs brilliantly with a glass of Champagne, a light Burgundy or a crisp dry cider. Also excellent baked at 180°C for 10–12 minutes until molten.
How do I know when it's ready?
Young St Jude is fresh and creamy with a firm-ish centre. Aged St Jude (2–5 weeks) becomes more liquid, the rind more pronounced and the flavour more complex. Both are delicious — it's a matter of preference. The cheese continues to ripen in your fridge so if you prefer it younger, eat it sooner.
