Our Basque Region Ibaïama Pork Belly is one of the most extraordinary pork cuts we offer — and for good reason. Raised exclusively in the rolling green hills of the Basque Country by the Mayté family and a select group of dedicated farmers, this pork belly is the product of generations of expertise and a unique local climate that combines fresh Atlantic air with clean Pyrenean mountain conditions.
The Ibaïama pig has a long history — only three farms in the Basque region are certified to rear these animals under the Ibaïama label. The pigs are at least one year old before slaughter and weigh more than 180kg, compared to 5 months and 90kg for a standard pig. This extended age and size yields a pork belly with extraordinary fat content, melting tenderness and a depth of flavour that standard belly cannot come close to.
Dry-aged in-house by our expert butchers, this pork belly has an outstanding smooth grain, a meltingly tender texture and a distinctive, savoury richness that makes it one of the finest slow-cook cuts we sell.

What makes Ibaïama pork belly different from standard pork belly?
Standard pork belly comes from pigs slaughtered at 5 months weighing 90kg. Our Ibaïama pork belly comes from pigs at least one year old weighing over 180kg. This extended life produces a belly with significantly more natural fat marbling, a deeper, more complex flavour and a meltingly tender texture when slow-cooked. It's in a completely different league.
How do I cook Ibaïama pork belly?
Slow-roast skin-side up at 160°C for 2.5-3 hours until the meat is completely tender, then blast at 220°C for 20-25 minutes to crisp the skin. Score the skin deeply before cooking and season generously with salt. The extraordinary Ibaïama fat renders beautifully throughout the slow cook. Rest for 15 minutes before carving.
Why might it arrive frozen?
Due to seasonal supply from the Basque Country, we occasionally send Ibaïama pork frozen. It will be vacuum-sealed and of identical quality to fresh. Freeze on arrival or defrost fully in the fridge overnight before cooking.

Our team will get your order ready 24 hours before the date requested at checkout. Everything will be cut fresh, packaged with the utmost care by our team and then boxed with ice packs in our sustainable packaging, ready to be delivered Next Day.
Your order will be sent via DPD to the postal address given, on the day of delivery DPD will send you a one hour timeslot for when their driver will drop off to your location. The driver will leave safe if you are not in so the box can be left outside until you arrive back home.
Our cool boxes maintain the right ambient temperature for up to 48 hours so your box will always arrive fresh and chilled.
