Our Basque Region Ibaïama Pork is our rarest and most distinctive pork offering available at TJB. Raised exclusively in the rolling green hills of the Basque Country by the Mayté family and a select group of dedicated farmers, this pork is the product of generations of expertise and a unique local climate that combines the fresh Atlantic breeze with the clean Pyrenean mountain air.
The Ibaïama pig has a long history; only three farms in the Basque region are certified to rear these animals under the Ibaïama label, ensuring every pig benefits from traditional husbandry and a slow-growing approach. The pigs are at least one year old before slaughter and always weigh more than 180kg compared to the 5 months and 90kg weight of a standard pig. The size and age of these animals means that they yield meat presenting a real depth of flavour alongside melting tenderness. The meat has a smooth grained texture and is marbled throughout.
Dry-Aged in-house by our expert butchers, this pork has an outstanding smooth grain, a tender bite and a distinctive, savoury richness.
