Why choose unsmoked over smoked?

Unsmoked bacon has a purer, cleaner pork flavour — you get the full taste of the dry-cured free range pork without the additional layer of smokiness. It's the better choice if you want the bacon flavour itself to shine — particularly in dishes where the bacon is a component alongside other strong flavours, or if you simply prefer the cleaner taste.

How do I cook it?

In a dry or lightly oiled pan over medium-high heat — 2-3 minutes per side for crisp bacon, 1-2 minutes per side if you prefer it softer. Also excellent under the grill — 3-4 minutes per side. Don't overcook — back bacon dries out quickly once the fat has rendered.

What's dry curing?

Dry curing is the traditional method — rubbing the pork directly with salt, sugar and curing agents rather than injecting brine (wet curing, used in most supermarket bacon). Dry curing draws out moisture and concentrates the flavour, producing bacon with a firmer texture, richer taste and far less shrinkage in the pan.

Your order will be sent via DPD to the postal address given, on the day of delivery DPD will send you a one hour timeslot for when their driver will drop off to your location. The driver will leave safe if you are not in so the box can be left outside until you arrive back home.
