What is dry curing?
Dry curing is the traditional method of curing bacon — rubbing the pork belly directly with salt, sugar and curing agents rather than injecting brine (wet curing). Dry curing draws out moisture and concentrates the flavour, producing bacon with a firmer texture, richer taste and better shrinkage in the pan. The result is noticeably superior to supermarket bacon.
What's the difference between streaky and back bacon?
Streaky bacon comes from the pork belly — it has more fat running through it, which is why it crisps up so dramatically in the pan. Back bacon comes from the loin — leaner, with a larger eye of meat. Streaky is the choice for BLTs, pigs in blankets, and wrapping around anything that needs added richness. Back bacon is the choice for breakfast sandwiches and full Englishes.
How do I cook it for maximum crispness?
Start in a cold, dry pan (no oil needed — the fat renders itself). Lay the rashers flat, turn up to medium-high and cook until the fat is rendered and the edges are crisp — 3-4 minutes per side. Alternatively, lay on a baking tray and oven-roast at 200°C for 15-18 minutes for perfectly uniform crispness.
