What is a centre cut fillet?
The centre cut is the middle section of the tenderloin — the most uniform, most tender and most prized part of the fillet. It produces a perfectly even steak with consistent thickness throughout, which means it cooks evenly and delivers the same experience from edge to edge. At 500g it's a generous portion — ideal for two as a sharing cut or one very serious steak dinner.
How do I cook it?
Remove from the fridge 45 minutes before cooking. Season generously with sea salt and black pepper. Sear in a very hot pan with oil for 2–3 minutes each side until deeply browned all over. Transfer to an oven at 180°C and cook for 10–15 minutes for medium-rare (internal temp 54°C). Rest for at least 8 minutes. Serve with bone marrow spooned over the top and a drizzle of good olive oil.
What's the best sauce to serve with fillet?

Your order will be sent via DPD to the postal address given, on the day of delivery DPD will send you a one hour timeslot for when their driver will drop off to your location. The driver will leave safe if you are not in so the box can be left outside until you arrive back home.
Our cool boxes maintain the right ambient temperature for up to 48 hours so your box will always arrive fresh and chilled.
