What's the difference between béarnaise butter and béarnaise sauce?
Traditional béarnaise sauce is an emulsion of egg yolks, butter, tarragon and shallot — notoriously temperamental to make and prone to splitting. This butter takes all those same flavours and binds them into a stable compound butter. You get identical flavour — tarragon, shallot, white wine vinegar — with none of the technique required. Just melt a disc over your rested steak and serve.
What cuts pair best with béarnaise butter?
Fillet and sirloin are the classic partners — the delicate tarragon and shallot flavours complement the cleaner, more refined character of these cuts.
