How do I cook chicken livers?

The key is high heat and not overcooking. Pat dry, season with salt. Heat butter in a very hot pan — when foaming, add the livers in a single layer. Cook for 2 minutes per side until browned on the outside but still slightly pink inside. Add shallots, thyme and a splash of cognac or Madeira in the final minute. Remove from heat and rest briefly. Overcooked liver turns grainy — the slightly pink centre is what you're aiming for.

How do I make chicken liver pâté?

Pan-fry the livers as above. Blend with softened butter (50:50 ratio), a splash of brandy, fresh thyme and seasoning until smooth. Pass through a sieve for an ultra-smooth result. Pour into ramekins, top with clarified butter to seal and refrigerate for at least 4 hours. Serve with toasted sourdough and cornichons. The quality of free range livers makes a noticeably better pâté.

How much does the pack weigh?

Each order contains 2 x 500g packs — 1kg total. Supplied vacuum-packed in individual portions for easy freezing and portioning.

From one of our trusted Yorkshire partner farms, where birds are slow-grown on open pasture and fed a natural, forage-rich diet. Raised with welfare and quality at the forefront.

Do you offer next-day delivery?

Yes — order before 11am Tuesday to Friday for next-day delivery across the UK mainland. Free delivery on orders over £95, otherwise £6.50.

Our team will get your order ready 24 hours before the date requested at checkout. Everything will be cut fresh, packaged with the utmost care by our team and then boxed with ice packs in our sustainable packaging, ready to be delivered Next Day.

Your order will be sent via DPD to the postal address given, on the day of delivery DPD will send you a one hour timeslot for when their driver will drop off to your location. The driver will leave safe if you are not in so the box can be left outside until you arrive back home.

Our cool boxes maintain the right ambient temperature for up to 48 hours so your box will always arrive fresh and chilled.
