Frequently Asked Questions
How do I slow-roast pork shoulder?
Bring to room temperature for 1 hour. Score the skin and season generously with salt. Roast at 220°C for 30 minutes for crackling, then reduce to 150°C for 4-5 hours until completely tender and pull-apart. Rest for 30 minutes. For pulled pork: cook until internal temperature reaches 95°C and the meat shreds easily.
Can I make pulled pork with pork shoulder?
Pork shoulder is the classic pulled pork cut. The high fat and collagen content means it breaks down completely after 5-6 hours at low heat, producing moist, flavoursome pulled pork that's perfect in buns, tacos or served with slaw. Rub generously with your preferred dry rub or marinade before cooking.
What's the difference between pork shoulder and Boston Butt?
Both come from the shoulder — the Boston Butt is from the upper part and is left bone-in for maximum flavour. Our boneless pork shoulder is from the lower section, boned out for easier carving and a more uniform shape. Both are excellent for slow cooking; the bone-in version has a slight flavour advantage.
Where does the pork come from?
From small, independent UK farms committed to free range rearing, regenerative land management and high animal welfare. Every pig is raised outdoors with space to roam and a natural diet.
