7 Day Dry-Aged, Free Range Rolled Pork Loin
The King of Pork roasting joints. Taken from the prime section of the animal, we carefully bone out the loin, score the fat and tie beautifully. Pasture-raised, Free Range Pork can be eaten slightly pink (and is beautiful when done so!) so be sure not to overcook your loin.
Whack it on a high heat first to get the crackling going before turning down to around 160 for the remainder of the cook. Simply serve with roasties or mash and some seasonal veg, I don't think any of us can argue with that.
