What makes Golden Herd Wagyu fillet different from standard fillet steak?
Standard grass-fed fillet is the most tender cut on the animal but relatively lean. Our Golden Herd Heritage Wagyu fillet has the same extraordinary tenderness combined with fine, intricate Wagyu marbling — producing a buttery, melt-in-the-mouth steak with far more depth of flavour than a standard fillet. It's a completely different eating experience.
How do I cook a Wagyu fillet steak?
Bring to room temperature for 30 minutes. Season with sea salt only — the marbling provides all the flavour needed. Sear in a hot pan with a small amount of butter — 2 minutes per side for medium-rare. The Wagyu fat content means it needs less heat than standard beef. Rest for at least 5 minutes. Don't overcook — medium-rare is essential to showcase the marbling.

Our Golden Herd Heritage Wagyu cattle are raised on lush pastures across the British Isles by a collective of passionate Wagyu farmers. Raised in a low-emission, pasture-focused system with additional feed grown on the farm to reduce food miles. Hand-selected from the top 1% of cattle at slaughter.

Japanese A5 Wagyu has the highest marbling scores in the world and an intensely rich, fatty flavour — often best enjoyed in small portions. Our Golden Herd Heritage Wagyu has a more moderate marbling score with a cleaner, grassier flavour profile from the pasture-raised system. It's more versatile as a full steak portion and offers a distinctly British character.

Our team will get your order ready 24 hours before the date requested at checkout. Everything will be cut fresh, packaged with the utmost care by our team and then boxed with ice packs in our sustainable packaging, ready to be delivered Next Day.
Your order will be sent via DPD to the postal address given, on the day of delivery DPD will send you a one hour timeslot for when their driver will drop off to your location. The driver will leave safe if you are not in so the box can be left outside until you arrive back home.
Our cool boxes maintain the right ambient temperature for up to 48 hours so your box will always arrive fresh and chilled.
