How do I braise Wagyu short ribs?
Season generously and sear all over in a very hot pan. Transfer to a deep casserole with red wine, beef stock, onions, garlic and herbs. Cover and cook at 150°C for 3.5-4 hours until the meat is falling off the bone. The Wagyu fat melts into the braising liquor, creating an extraordinarily rich, glossy sauce. Rest for 10 minutes before serving.
Can I smoke Wagyu short ribs?
Absolutely — Wagyu short ribs are outstanding smoked. Season with salt and pepper. Smoke at 120°C over oak for 7-9 hours until probe-tender (around 95°C internal). The Wagyu fat renders beautifully, creating a magnificent bark and an incredibly rich, juicy result. Rest for 30 minutes before serving.
Why might they arrive frozen?
Some Golden Herd Heritage Wagyu cuts are available seasonally in limited quantities. We freeze within 24 hours of butchering to maintain peak quality. Defrost fully in the fridge overnight before cooking.

Our Golden Herd Heritage Wagyu cattle are raised on lush pastures across the British Isles. Raised in a low-emission, pasture-focused system. Hand-selected from the top 1% of cattle at slaughter.

Our team will get your order ready 24 hours before the date requested at checkout. Everything will be cut fresh, packaged with the utmost care by our team and then boxed with ice packs in our sustainable packaging, ready to be delivered Next Day.
Your order will be sent via DPD to the postal address given, on the day of delivery DPD will send you a one hour timeslot for when their driver will drop off to your location. The driver will leave safe if you are not in so the box can be left outside until you arrive back home.
