What is lamb neck fillet?
Lamb neck fillet is the long, cylindrical muscle running along the neck of the lamb. Despite the name, it's surprisingly tender and full of flavour — more so than many of the prime cuts. It sits between working muscles which gives it a slightly deeper, more complex flavour, while the dry-ageing process ensures it's as tender as it looks.
How do I cook lamb neck fillet?
For grilling: marinate in olive oil, garlic, rosemary and lemon. Cook over high heat — 3-4 minutes per side for medium-pink. Rest for 5 minutes, slice on the angle. For braising: dice and brown in batches, then slow-cook in stock, tomatoes and spices for 1.5-2 hours for a superb curry or ragu.
Can I use neck fillet for a curry?
Excellent for curry — the neck fillet has just enough fat marbling to stay moist through the long braise without drying out. Dice into 3-4cm pieces, brown well, then slow-cook in your preferred curry sauce for 1.5-2 hours until meltingly tender. Better than diced shoulder for a more refined result.

Our team will get your order ready 24 hours before the date requested at checkout. Everything will be cut fresh, packaged with the utmost care by our team and then boxed with ice packs in our sustainable packaging, ready to be delivered Next Day.
Your order will be sent via DPD to the postal address given, on the day of delivery DPD will send you a one hour timeslot for when their driver will drop off to your location. The driver will leave safe if you are not in so the box can be left outside until you arrive back home.
Our cool boxes maintain the right ambient temperature for up to 48 hours so your box will always arrive fresh and chilled.
