How do I caramelise onions properly?
The key is low heat and patience — rushing caramelised onions produces browned but not truly caramelised results. Slice thinly and cook in a wide pan with a generous knob of butter and a pinch of salt over the lowest heat possible. Stir occasionally for 45–60 minutes until deeply golden, sweet and jammy. A splash of balsamic vinegar or red wine in the last 10 minutes adds extra complexity. Worth every minute — the depth of flavour is incomparable.
What's the best way to roast onions?
Leave them whole (unpeeled for maximum flavour) or halve them. Drizzle with olive oil and season with sea salt. Roast at 200°C for 40–50 minutes until completely soft and caramelised — the outer skin chars and protects the interior, which becomes sweet and yielding. Excellent alongside any roasting joint, or served on their own with good vinegar and cheese.
How should I store them?
Store in a cool, dry, dark place with good airflow — a mesh bag or open bowl in a cupboard is ideal. Never refrigerate whole onions as moisture causes them to go soft and mouldy. Keep away from potatoes, which produce gases that accelerate each other's deterioration. Properly stored, they'll keep for several weeks.
