What's the best way to braise leeks?

Trim the roots and dark green tops, halve lengthways and wash thoroughly between the layers. Melt a generous knob of butter in a wide pan over medium heat, add the leeks cut-side down and cook for 3–4 minutes until golden. Add a splash of white wine or chicken stock, cover and braise on a low heat for 15–20 minutes until completely tender. Finish with a pour of double cream, season well and scatter over finely chopped smoked streaky bacon if using. Outstanding.

How do I clean leeks properly?

Leeks trap grit and soil between their layers. Trim the roots and the tough dark green tops, then halve lengthways and fan the layers open under cold running water, working from the top down. Alternatively, slice into rounds first and rinse in a colander — the grit sinks to the bottom of the bowl. Always wash before cooking.

What else can I make with leeks?

Leek and potato soup (vichyssoise) — a classic. Leek gratin with cream and Gruyère. Stirred through a risotto in the last few minutes of cooking. Added to a quiche or tart. Wilted briefly and served alongside fish. Used as a base for a braise or stew instead of onion. Leeks are one of the most versatile vegetables in the kitchen.

How should I store them?

Refrigerate unwashed in the salad drawer. They'll keep well for 5–7 days. Once cut, wrap in damp kitchen paper and refrigerate, using within 2–3 days.
