Bone marrow is the fatty, nutrient-dense tissue found inside the femur bones of cattle. When roasted, it melts to a silky, buttery consistency with a rich, beefy depth of flavour. It's a staple of classic French cuisine — roasted in the bone and served with toast and sea salt — and has enjoyed a major revival in modern restaurants and home kitchens.
How do I roast beef marrow bones?
Preheat your oven to 220°C. Place the split bones marrow-side up on a baking tray. Season with sea salt. Roast for 15-20 minutes until the marrow is bubbling and beginning to pull away from the bone. Serve immediately with toasted sourdough, a simple herb and caper salad, and flaky sea salt. Don't overcook — the marrow will liquify and run out of the bone.
Can I use marrow bones for stock?
Yes — marrow bones add exceptional richness and body to beef stock and bone broth. Roast them first at 220°C for 20-25 minutes to caramelise the exterior, then add to your stockpot with cold water, vegetables and herbs. Simmer for 8-24 hours for a deeply gelatinous, collagen-rich broth.

Your order will be sent via DPD to the postal address given, on the day of delivery DPD will send you a one hour timeslot for when their driver will drop off to your location. The driver will leave safe if you are not in so the box can be left outside until you arrive back home.
