What is pork tenderloin?

Pork tenderloin — also known as pork fillet — is the long, thin, tapering muscle that runs beneath the backbone of the pig. It's the least worked muscle on the animal, making it the most tender cut available. Lean, fine-grained and quick to cook, it's prized for its delicate texture and mild, sweet pork flavour.

How do I cook pork tenderloin?

Bring to room temperature for 20 minutes. Season all over with sea salt. Sear in a hot pan with a little butter — 2 minutes each side until golden. Finish in the oven at 190°C for 12-15 minutes until the internal temperature reaches 63°C (slightly pink). Rest for 5-8 minutes before slicing. Alternatively, slice into medallions and pan-fry for 2-3 minutes per side.

Can I marinate pork tenderloin?

Yes — pork tenderloin is excellent marinated. Its lean, fine grain absorbs flavours beautifully. Marinate for 2-8 hours in soy and ginger, garlic and herbs, or honey and mustard. Pat dry before cooking to ensure a good sear. Don't marinate in anything highly acidic for too long as it can affect the texture.

Your order will be sent via DPD to the postal address given, on the day of delivery DPD will send you a one hour timeslot for when their driver will drop off to your location. The driver will leave safe if you are not in so the box can be left outside until you arrive back home.

Our cool boxes maintain the right ambient temperature for up to 48 hours so your box will always arrive fresh and chilled.
