What is a pork T-bone chop?

A pork T-bone chop is cut from the loin section where the loin muscle and the fillet (tenderloin) sit either side of the T-shaped backbone — exactly like a beef T-bone steak. The loin side is rich and flavoursome with good fat marbling, the fillet side is leaner and butter-soft. Together they make the most generous and satisfying pork chop available.

How do I cook a pork T-bone chop?

Bring to room temperature for 20-30 minutes. Season generously with sea salt. Sear in a hot cast iron pan — 3-4 minutes per side. The fillet side cooks slightly faster than the loin — keep an eye on it. Rest for 5 minutes. Cook to 63°C internal — slightly pink is perfectly safe and gives the best eating quality. Don't overcook.

Is pork T-bone good on the BBQ?

Excellent on the BBQ — the bone protects the meat from the direct heat and adds a smoky character. Cook over medium-high heat, 4-5 minutes per side. Rest well before serving. Marinate in garlic, herbs and olive oil for 2-4 hours beforehand for an outstanding result.
