Frequently Asked Questions
What cuts is the diced beef made from?
Our diced beef is cut from the forequarter — primarily chuck and braising cuts that are naturally rich in collagen and connective tissue. During slow cooking, this collagen breaks down into gelatin, creating that luxurious, sticky, melt-in-the-mouth texture that makes a great stew or casserole.
What's the best way to cook diced beef?
Brown the diced beef in batches in a very hot pan with beef dripping — don't overcrowd the pan or it will steam rather than caramelise. Once browned, transfer to a casserole dish with your chosen liquid and aromatics. Cook low and slow at 150°C for 2.5-3 hours, or in a slow cooker on low for 6-8 hours.
How long should I slow cook diced beef?
For a casserole or stew in the oven: 2.5-3 hours at 150°C. In a slow cooker: 6-8 hours on low or 4-5 hours on high. The meat is ready when it pulls apart easily with a fork. Don't rush it — the low and slow process is what transforms it from chewy to meltingly tender.
Where does the beef come from?
From native grass-fed British cattle raised on small, independent UK farms committed to regenerative farming. Selected for flavour, not fast growth.
