What cut is the free range pork chop?

Our pork chop is taken from the rib end of the loin — the section closest to the shoulder. This gives you a chop with a generous layer of fat, natural marbling and a section of rib bone that adds flavour during cooking. It's the most flavoursome chop on the pig.

How do I cook a dry-aged pork chop?

Bring to room temperature for 20 minutes. Season with sea salt. Sear in a hot cast iron pan — 3-4 minutes per side. Stand on the fat cap briefly to render it. Finish in the oven at 180°C for 5-6 minutes if thick. Rest for 5 minutes. Cook to 63°C internal — slightly pink in the centre is perfectly safe and gives the best result.

From small, independent UK farms committed to free range rearing, regenerative land management and high animal welfare standards. Every pig we source is raised outdoors with space to roam and a natural diet.

How long does dry-ageing pork take?

We dry-age our pork for 7 days in-house. This concentrates the flavour, firms up the texture and improves tenderness. The result is noticeably more flavoursome than fresh pork — more depth, better texture, and a cleaner finish when cooked.

Do you offer next-day delivery?

Yes — order before 11am Tuesday to Friday for next-day delivery across the UK mainland. Free delivery on orders over £95, otherwise £6.50.

Our team will get your order ready 24 hours before the date requested at checkout. Everything will be cut fresh, packaged with the utmost care by our team and then boxed with ice packs in our sustainable packaging, ready to be delivered Next Day.

Your order will be sent via DPD to the postal address given, on the day of delivery DPD will send you a one hour timeslot for when their driver will drop off to your location. The driver will leave safe if you are not in so the box can be left outside until you arrive back home.

Our cool boxes maintain the right ambient temperature for up to 48 hours so your box will always arrive fresh and chilled.
