What is a Barnsley chop?
A Barnsley chop is a double loin chop cut across the whole saddle of the lamb — giving you both sides of the loin (fillet and loin eye) in one generous, bone-in chop. Named after the Yorkshire town where it was first popularised, it's significantly more substantial than a standard single loin chop and has a wonderful symmetry on the plate.
How do I cook Barnsley chops?
Bring to room temperature for 20 minutes. Season generously with sea salt. Sear in a hot cast iron pan or grill over high heat — 3-4 minutes per side for medium-pink. Stand on the fat cap briefly to render it. Rest for 5 minutes. At 60°C internal the lamb will be perfectly pink. Finish with a squeeze of lemon and a handful of fresh mint.

From small, independent UK farms including those near the Salt Marshes by Abingdon Reservoir, rearing grass-fed lamb using regenerative and welfare-focused methods. Dry-aged in-house for a minimum of 7 days at TJB.

Your order will be sent via DPD to the postal address given, on the day of delivery DPD will send you a one hour timeslot for when their driver will drop off to your location. The driver will leave safe if you are not in so the box can be left outside until you arrive back home.
