What is a lamb chump chop?

The chump is cut from the rump end of the lamb — between the leg and the loin. It's a boneless, well-rounded steak with a good fat covering that renders beautifully during cooking. The chump is often compared to a beef rump steak — excellent flavour, very lean, and best cooked hot and fast. A great everyday lamb cut that's often overlooked in favour of flashier options.

How do I cook lamb chump chops?

Bring to room temperature for 15-20 minutes. Season generously with sea salt. Cook in a hot pan or on the grill — 3-4 minutes per side for medium-pink. Rest for 4-5 minutes. At 60°C internal the lamb will be perfectly pink. Excellent with a simple mint sauce or a rosemary and garlic butter melted over while resting.

What's the difference between chump chops and loin chops?

Loin chops are cut from further forward on the animal and have a T-shaped bone — similar to a beef T-bone. Chump chops come from further back and are boneless. Both are quick-cooking and flavoursome, but the chump is leaner with a slightly firmer texture. The minted variant comes pre-marinated and is ready straight for the pan or grill.

Our team will get your order ready 24 hours before the date requested at checkout. Everything will be cut fresh, packaged with the utmost care by our team and then boxed with ice packs in our sustainable packaging, ready to be delivered Next Day.

Your order will be sent via DPD to the postal address given, on the day of delivery DPD will send you a one hour timeslot for when their driver will drop off to your location. The driver will leave safe if you are not in so the box can be left outside until you arrive back home.

Our cool boxes maintain the right ambient temperature for up to 48 hours so your box will always arrive fresh and chilled.
