What does gigot-style mean?
Gigot is the French word for leg of lamb. Gigot-style leg steaks are cut straight across the leg bone — so each steak has a cross-section of the leg meat surrounding the central bone. The bone adds flavour and helps keep the steak moist during cooking. It's the classic way to cut leg steaks across much of Europe.
How do I cook lamb leg steaks?
Bring to room temperature for 20 minutes. Season generously with sea salt. Cook in a hot pan or on the BBQ — 3-4 minutes per side for medium-pink. Rest for 5 minutes. At 60°C internal the lamb will be perfectly pink. Excellent with a simple salsa verde, mint sauce or a herb butter. Don't overcook — lamb leg dries out quickly past medium.

From small-scale UK farms that rear grass-fed lamb using regenerative practices, including the Salt Marshes near Abingdon Reservoir. Dry-aged in-house for a minimum of 7 days at TJB.

Our team will get your order ready 24 hours before the date requested at checkout. Everything will be cut fresh, packaged with the utmost care by our team and then boxed with ice packs in our sustainable packaging, ready to be delivered Next Day.
Your order will be sent via DPD to the postal address given, on the day of delivery DPD will send you a one hour timeslot for when their driver will drop off to your location. The driver will leave safe if you are not in so the box can be left outside until you arrive back home.
Our cool boxes maintain the right ambient temperature for up to 48 hours so your box will always arrive fresh and chilled.
