How do I roast a leg of lamb?
Bring to room temperature for 1 hour. Score the skin and stud with garlic and rosemary. Season generously with sea salt. Roast at 220°C for 20 minutes, then reduce to 170°C — approximately 20 minutes per 500g for medium-pink. Rest for at least 20 minutes before carving. Use a thermometer: 60°C internal for pink, 70°C for medium-well.
How do I cook the butterflied leg on the BBQ?
Bring to room temperature. Marinate for at least 2 hours — olive oil, garlic, rosemary, lemon and salt works beautifully. Cook over medium-high coals — approximately 8-10 minutes per side for medium-pink on a 2kg butterflied leg. Rest for at least 10 minutes before slicing against the grain into thick pieces.
How many does a leg of lamb serve?
As a guide: 1.5kg serves 3-4 people, 2kg serves 4-5, 3kg serves 6-8. Because it's boned at the aitch, there's minimal waste — most of the weight is eating meat. The butterflied 2kg option also serves 4-5.

Your order will be sent via DPD to the postal address given, on the day of delivery DPD will send you a one hour timeslot for when their driver will drop off to your location. The driver will leave safe if you are not in so the box can be left outside until you arrive back home.
