What's the best way to roast a whole cauliflower?

Remove the outer leaves and trim the base so it sits flat. Rub all over with olive oil, sea salt and your choice of spices — smoked paprika, cumin and turmeric work brilliantly. Roast at 200°C for 45–60 minutes until deeply golden all over and a knife slides through the centre without resistance. Rest for 5 minutes and serve whole at the table — it's spectacular. A tahini dressing and toasted seeds on top take it to another level.

How do I make a proper cauliflower cheese?

Break into large florets and par-boil for 5 minutes until just tender. Make a béchamel — butter, flour, milk — and stir in a generous amount of grated strong cheese (Lincolnshire Poacher or Isle of Mull Cheddar are outstanding). Season well with salt, pepper and a pinch of nutmeg. Pour over the drained cauliflower in a baking dish, top with more grated cheese and fresh breadcrumbs, and bake at 200°C for 25–30 minutes until golden and bubbling.

Can I make cauliflower rice?

Yes — blitz raw florets in a food processor until they resemble rice grains (don't over-process or it becomes mush). Cook in a dry pan over medium-high heat for 5–7 minutes, stirring frequently, until just tender. Season well. A useful low-carb alternative to rice that works well with curries, stews and stir-fries.

How should I store it?

Refrigerate whole in the salad drawer — it'll keep well for 5–7 days. Once cut, store in an airtight container and use within 3–4 days. Keep away from ethylene-producing fruits which can cause browning.
