What's the best way to roast parsnips?
Par-boil for 5–7 minutes until just starting to soften, then drain and roast in hot fat (butter, goose fat or olive oil) at 200°C for 30–35 minutes until deeply golden and caramelised. In the last 5 minutes, drizzle with good honey and scatter over finely grated Parmesan — it creates a sticky, savoury-sweet crust that's hard to beat. Season well with sea salt throughout.
Why do they come in different shapes and sizes?
Because they're genuinely organic. Commercially grown parsnips are graded to uniform sizes for supermarket presentation — small, misshapen or forked parsnips are discarded. Organic produce comes in natural shapes and sizes, which is a sign of proper farming rather than a quality issue. Flavour is not affected by shape.
Can I use them for soup?
Outstanding for soup — parsnip and apple, parsnip and ginger, or a classic cream of parsnip are all exceptional. Their natural sweetness means they need very little seasoning. Roast them first before blending for a deeper, more complex flavour.
How should I store them?
Store in a cool, dark place — a cupboard or garage is ideal. They'll keep well for 1–2 weeks. If they start to soften slightly, roast them — they'll taste just as good. Avoid the fridge, which can make them go limp and affect the flavour.
