What's the best way to cook swede?

Roasted: peel, cube and roast in hot fat at 200°C for 35–40 minutes until caramelised and tender. Mashed: peel, cube and boil until tender (20–25 minutes), then mash with plenty of butter, salt and black pepper — a classic neeps alongside haggis. Add to stews and braises in the last 45 minutes of cooking for a sweet, earthy depth. Also excellent combined half-and-half with mashed potato.

How do I peel swede easily?

Swede has a thick, waxy skin that needs a sharp knife rather than a peeler. Cut a flat base first so it sits stable on the board, then work your way around cutting the skin off in downward strokes. The flesh is dense and firm — use a sturdy knife and take your time.

How long will it keep?

Whole swede keeps well for 2–3 weeks in a cool, dark place. Once peeled and cut, refrigerate and use within 3–4 days. Cooked swede freezes well for up to 3 months.

Is it certified organic?

Yes — grown without synthetic pesticides or herbicides on certified organic farms. They come in natural shapes and sizes — a sign of proper organic farming rather than a quality issue.
