The Picanha — or rump cap — is one of Brazil's most celebrated cuts and one of the best-kept secrets in British butchery. Cut from the top of the rump, it sits beneath a thick, beautiful layer of fat that renders down during cooking to baste the meat continuously, producing extraordinary juiciness and a depth of flavour that most steaks simply can't match. Our Picanha comes from grass-fed British cattle, aged on the carcass for natural tenderness and flavour development, then butchered in-house at Coxtie Green Farm in Brentwood.

What is Picanha?
Picanha (pronounced pee-CAN-ya) is the rump cap — a triangular muscle sitting on top of the rump, covered by a thick layer of fat. It's the most prized cut in Brazilian churrasco culture, where it's skewered whole, cooked over an open fire and sliced at the table. In the UK it's often broken down into individual rump steaks by butchers who don't know what they have — which is a shame, because cooked whole it's one of the most spectacular beef eating experiences available.
How do I cook Picanha?
The traditional method: score the fat cap lightly in a crosshatch pattern without cutting into the meat. Season generously with sea salt only — nothing else. Fold into a C-shape with the fat on the outside and skewer if cooking over fire, or place fat-side up on a rack in a roasting tin. Roast at 220°C for 20–25 minutes until the fat is golden and rendering, then rest for 10–15 minutes before slicing against the grain into thick steaks. Alternatively, reverse-sear: cook low and slow at 120°C until 52°C internal, then finish in a screaming hot pan or on the barbecue for the crust.
Should I remove the fat cap?
Absolutely not — the fat cap is the whole point of the Picanha. It renders during cooking to baste the meat continuously from above, delivering the juiciness and depth of flavour that makes this cut exceptional. Score it lightly (to prevent it from curling) and season it well, but keep it on throughout cooking. It also forms a beautiful golden crust when roasted at high heat.
How many people does it serve?
A whole Picanha at 1–1.5kg serves 3–4 people comfortably as a main course. It's a natural centrepiece cut — roast it whole, rest it, then slice at the table for a genuinely impressive result.
