Frequently Asked Questions

How do I slow-roast a shoulder of lamb?

Bring to room temperature for 1 hour. Score the skin and stud generously with garlic. Season well with sea salt. Roast covered at 160°C for 4-5 hours until completely pull-apart tender, then uncover and blast at 220°C for 20 minutes to crisp the outside. Rest for 20 minutes before pulling or carving.

What is kleftiko-style lamb?

Kleftiko is a Greek slow-cooking method where the lamb is marinated in lemon, garlic, herbs and olive oil, then sealed and cooked very slowly — traditionally in a clay oven. Our kleftiko-style garlic and herb slices are pre-marinated and ready to cook. Wrap tightly in foil or a roasting bag and cook at 150°C for 3-4 hours until meltingly tender.

How many does a shoulder of lamb serve?

A half shoulder (approx. 1.25kg) serves 2-3 people. A whole shoulder (approx. 2.5kg) serves 5-6. Because of the bone and fat content, allow slightly more per person than you would for a boneless joint.

From small, independent UK farms including our own and the Salt Marshes near Abingdon Reservoir. These farms operate with a shared commitment to regenerative agriculture, animal welfare and exceptional quality. Dry-aged in-house for 7 days at TJB.

Yes — order before 11am Tuesday to Friday for next-day delivery across the UK mainland. Free delivery on orders over £95, otherwise £6.50.

Our team will get your order ready 24 hours before the date requested at checkout. Everything will be cut fresh, packaged with the utmost care by our team and then boxed with ice packs in our sustainable packaging, ready to be delivered Next Day.

Your order will be sent via DPD to the postal address given, on the day of delivery DPD will send you a one hour timeslot for when their driver will drop off to your location. The driver will leave safe if you are not in so the box can be left outside until you arrive back home.

Our cool boxes maintain the right ambient temperature for up to 48 hours so your box will always arrive fresh and chilled.
