How do I cook a rack of lamb?

Bring to room temperature for 30 minutes. Season generously with sea salt and press a herb crust of breadcrumbs, garlic, rosemary and Dijon onto the fat side if desired. Sear fat-side down in a hot pan for 2 minutes, then roast fat-side up at 200°C for 18-22 minutes for pink (60°C internal). Rest for 8 minutes before carving into individual cutlets between the bones.

How many does a rack of lamb serve?

A 550g rack typically contains 6-8 cutlets and serves 2 people as a main course — 3-4 cutlets each. For a starter, 2 cutlets per person is generous.

What's the difference between a rack of lamb and lamb cutlets?

A rack of lamb is the whole French-trimmed section of rib bones, roasted as one impressive joint. Lamb cutlets are the individual chops cut from the rack. Both come from the same primal — the rack is the showstopping centrepiece, the cutlets are the quick-cook everyday option.

From small, independent farms across the UK, including the Salt Marshes near Abingdon Reservoir. These farms practise regenerative agriculture and prioritise quality, animal welfare and sustainability. Dry-aged in-house for 7 days at TJB.

Yes — order before 11am Tuesday to Friday for next-day delivery across the UK mainland. Free delivery on orders over £95, otherwise £6.50.

Our team will get your order ready 24 hours before the date requested at checkout. Everything will be cut fresh, packaged with the utmost care by our team and then boxed with ice packs in our sustainable packaging, ready to be delivered Next Day.

Your order will be sent via DPD to the postal address given, on the day of delivery DPD will send you a one hour timeslot for when their driver will drop off to your location. The driver will leave safe if you are not in so the box can be left outside until you arrive back home.

Our cool boxes maintain the right ambient temperature for up to 48 hours so your box will always arrive fresh and chilled.
