What's the best way to roast cherry tomatoes?
Place whole on a baking tray, drizzle generously with good olive oil and season with sea salt, black pepper and a pinch of sugar. Add a few unpeeled garlic cloves and a sprig of thyme or rosemary. Roast at 200°C for 20–25 minutes until the skins are blistered and the tomatoes are jammy and caramelised. Use as a sauce base (just squash and stir), as a topping for bruschetta or as a side dish with anything roasted.
How do I make a quick tomato sauce?
Halve the tomatoes and cook in a wide pan with a generous glug of olive oil, a crushed garlic clove and a pinch of salt over medium heat for 15–20 minutes, stirring occasionally, until the tomatoes have completely broken down into a thick, jammy sauce. Season with salt, a pinch of sugar and torn fresh basil. Toss through pasta immediately. It takes less time than a jarred sauce and tastes incomparably better.
Should I refrigerate tomatoes?
No — refrigeration destroys the volatile compounds responsible for a tomato's flavour and aroma, making them taste flat and mealy. Keep at room temperature, out of direct sunlight. Use within 3–5 days. Only refrigerate if they're very ripe and you need to slow further ripening — but bring back to room temperature before eating.

Your order will be sent via DPD to the postal address given, on the day of delivery DPD will send you a one hour timeslot for when their driver will drop off to your location. The driver will leave safe if you are not in so the box can be left outside until you arrive back home.
