Air-Dried Coppa | Award-Winning British Charcuterie, Dry-Aged 3 Months
Winner of a British Charcuterie Awards Silver Medal and a Great Taste Award Star, our Air-Dried Coppa is made from the collar (nape) of the pig — a cut with an almost perfect meat-to-fat ratio that's ideally suited to air-drying. Cured with our own blend of black pepper, coriander, garlic and nutmeg, then air-dried for three months, it develops a sweet, nutty and gently spiced character with a beautifully firm, yielding texture. Serve thinly sliced on a charcuterie board for maximum impact.

Frequently Asked Questions
What is Coppa?
Coppa (also known as Capicola, Capocollo or Nape) is an Italian cured meat made from the collar or neck of the pig — the muscle that runs from the head to the fourth or fifth rib. It has an almost perfect ratio of lean meat to fat marbling, which makes it ideal for air-drying. After curing with salt, spices and herbs, it's air-dried for several months to develop its characteristic sweet, nutty, gently spiced flavour and firm but yielding texture.
How should I serve it?
Always slice as thinly as possible — ideally on a meat slicer. Serve at room temperature on a charcuterie board alongside strong hard cheeses, pickles, olives and good bread. The sweet, nutty flavour pairs particularly well with aged hard cheeses like Manchego, Lincolnshire Poacher or Parmesan. Also excellent draped over a pizza or flatbread fresh from the oven, or layered into a sandwich with good cheese and mustard.
What makes it British charcuterie?
It's made in Britain using British pork, British know-how and a curing process developed by our team — not imported from Italy. The awards (British Charcuterie Awards Silver Medal, Great Taste Award Star) recognise it as genuinely exceptional British charcuterie that stands alongside the best Italian equivalents.
How should I store it?
Keep refrigerated. Consume within 5–7 days of opening. Before opening, keep vacuum-packed as delivered. Once opened, wrap in wax paper and refrigerate. Bring to room temperature for 15 minutes before serving.
