Sourced from one of Italy's oldest producers, our Nogara Speck is a traditional Alto Adige-style cured and lightly smoked ham of exceptional quality. Only the finest legs of pork are selected, marinated in a secret blend of herbs, spices and salt for around three weeks, then cold-smoked before being left to cure for a minimum of 6–12 months. The result is a ham with a firm, dense texture, a deep savoury flavour and a subtle smoky complexity — quite different to the sweeter, moister character of standard cooked ham. Sliced thinly, it's a superb addition to any charcuterie board.

What is Speck?
Speck is a traditional cured and smoked ham originating from the Alto Adige region of northern Italy — a mountainous area on the border with Austria, which explains its distinctive combination of Mediterranean salt-curing and Alpine smoking traditions. Unlike Prosciutto, which is salt-cured only, Speck is also cold-smoked, giving it a firmer texture and a more complex, slightly smoky flavour profile.
How does it differ from Prosciutto?
Both are dry-cured Italian hams, but Speck is cold-smoked after curing — Prosciutto is not. This gives Speck a firmer texture, a darker colour and a more assertive, smoky-savory flavour. Speck is also typically marinated in a blend of herbs and spices before curing, whereas Prosciutto is seasoned with salt only. Both are excellent; Speck has more character and complexity.
How should I serve it?
Slice as thinly as possible — ideally on a meat slicer or with a very sharp knife. Serve at room temperature alongside strong cheeses, pickles, mustard and good bread on a charcuterie board. Also excellent wrapped around breadsticks, draped over a bruschetta with olive oil, or pan-fried briefly until crisp and scattered over a salad.
How should I store it?
Keep refrigerated and consume within 5–7 days of opening. Before slicing, keep vacuum-packed. Once opened, wrap in wax paper or greaseproof and refrigerate. Bring to room temperature for 15 minutes before serving for the best flavour.
