A cured, lightly smoked ham, Speck is a firm favourite throughout Europe for it's distinctive flavour/texture profile. Only the best legs of pork are selected for Speck before being marinated in a secret blend of herbs, spices and salt for around three weeks. The legs are then smoked before being left alone to cure until ready, anywhere from 6-12 months.
At TJB we source only the very best, authentic Speck from one of Italy's oldest producers. Sliced thinly, this is a superb addition to a charcuterie board or fried off quickly and added to a salad.
