    Four simple side dish recipes to take your Christmas Dinner to the next level. Prepare in advance and bake at 180°C alongside your turkey.

    Extra Special Christmas Pigs in Blankets

    Method: Place frozen pigs in blankets on a lined baking tray. Cook for 35–40 minutes, turning halfway.

    Homemade Sausage & Apple Stuffing

    Use to stuff the turkey neck, roll into balls, or cook in a loaf tin and serve in slices.
    Ingredients: 1kg Free Range Sausage Meat, 1 large white onion (finely sliced), 1 small Organic Apple (peeled and diced), 1 tsp ground nutmeg, ½ tsp ground cinnamon, fresh sage, 100g breadcrumbs, salt, pepper, olive oil and butter.
    Method:
    1. Sauté onions in olive oil 5–6 minutes until translucent
    2. Add apple and butter, cook 2 minutes; cool in a large bowl
    3. Add sausage meat, spices, breadcrumbs and sage; mix with hands
    4. Pack into a 1kg loaf tin; bake 35–40 minutes at 180°C

    Honey & Orange Glazed Roasted Veggies

    Ingredients: 1 Seasonal Organic Veg Roasting Box, 2 tbsp raw honey, zest and juice of 1 orange, fresh thyme, 1 tsp ground cumin, olive oil, salt and pepper.
    Method:
    1. Peel and chop squash into crescents; quarter carrots and parsnips lengthways; separate garlic bulb
    2. Mix honey, orange juice and zest, cumin, olive oil and thyme
    3. Toss veg in glaze on a large roasting tray; spread evenly
    4. Roast uncovered at 180°C for 45 minutes, tossing every 15 minutes

    Festive Spiced Red Cabbage & Apple

    Ingredients: 1 red cabbage (finely sliced), 1 large Bramley apple (peeled and diced), 4 rashers Organic Smoked Streaky Bacon (finely sliced), 2 sprigs fresh rosemary, 1 tsp fennel seeds, 4 tbsp balsamic vinegar, juice of 1 clementine.
    Method:
    1. Sauté bacon 1 minute on high heat; add rosemary and fennel seeds, cook 1 more minute
    2. Add red cabbage, apple and balsamic; add clementine juice to deglaze
    3. Season, add 50ml water, cook on medium heat or in oven 30 minutes stirring until sticky

    Garnish with fresh cranberries, sage leaves and candied orange slices for a feast that looks as good as it tastes.
