Four simple and easy side dish recipes to take your Christmas Dinner to the next level. Make in advance and bake in the oven with your turkey (or meat of your choosing) for a deceivingly easy but extra special festive feast.

Each of these side dishes can be prepared in advance and cooked in the oven at 180C – perfect for cooking on the spare shelves whilst your meat is roasting.
With some festive flavour boosts and gorgeous garnishes your guests are sure to be impressed. The only downside is that leftovers are very unlikely!

Extra Special Christmas Pigs in Blankets Recipe 
This recipe requires just one ingredient and no introduction – chipolatas. 
Our Free Range, Grass Fed Blythburgh pork sausages are made by hand and delicately flavoured with fresh herbs and spices. They are then lovingly wrapped in smoky streaky bacon to create the perfect half sized chipolatas will full sized flavour.
We don’t add any preservatives to our sausages, so they arrive frozen and can be cooked from frozen for the best results. Here’s the recipe.

  1. Place your frozen pigs in blankets onto a lined baking tray
  2. Cook for 35-40 minutes, turning halfway through to ensure an even cook

Homemade Sausage & Apple Stuffing
Once you have prepared your sausage and apple stuffing mix, you can use it to stuff the neck of your turkey, roll into stuffing balls or cook in a loaf tin and serve in slices.
You could even use all three methods to cater for everyone’s favourite stuffing preferences – after all, stuffing is a serious matter.
However you choose to enjoy it, this apple and sage sausage stuffing recipe is packed with flavour and delicately spiced for a festive upgrade. Here’s the recipe.
INGREDIENTS:
  • 1kg Free Range Sausage Meat
  • 1 large white onion (finely sliced)
  • 1 small Organic Apple (peeled and diced)
  • 1 teaspoon ground nutmeg
  • ½ teaspoon ground cinnamon
  • 1 handful fresh sage leaves (finely chopped)
  • 100g breadcrumbs (or gluten free alternative)
  • Salt & pepper
  • Olive oil & butter 
METHOD:
  1. Sauté the onions in a drizzle of olive oil for 5-6 minutes until cooked and translucent
  2. Add the apple and a knob of butter and cook for a further 2 minutes then transfer everything into a large bowl and allow to cool
  3. Add the sausage meat, nutmeg, cinnamon, bread crumbs and sage leaves to the bowl – season with salt and pepper and mix everything with your hands until well combined
  4. Pack the mixture into a 1kg loaf tin and cook in the oven to for 35-40 minutes

Honey & Orange Glazed Roasted Veggies
Our signature honey, orange and thyme glaze will give your roasted veggies a sticky and caramelised finish which is finger licking good. Here’s the recipe.
INGREDIENTS:
  • 1 Seasonal Organic Veg Roasting Box (parsnips, carrots, garlic & butternut squash)
  • 2 tablespoons Organic raw honey
  • Zest & juice of 1 orange
  • Handful fresh thyme leaves
  • 1 teaspoon ground cumin
  • Olive oil
  • Salt & pepper
METHOD:
  1. Begin by preparing your vegetables: peel and deseed the squash before slicing into 1cm thick crescents, then top and tail your carrots & parsnips before quartering lengthways – finally, separate your garlic bulb into cloves (leaving the skin on)
  2. Next, in a small bowl mix the honey, orange juice & zest, cumin, olive oil and thyme leaves
  3. Add all the veg to a large roasting tray, drizzle in the honey & orange glaze and toss until well coated
  4. Spread the veg out into an even layer and place into the oven, roasting uncovered for 45 minutes and tossing every 15 minutes or so

Festive Spiced Red Cabbage & Apple
Red cabbage is a Christmas side dish favourite. Add some simple festive twists and allow to cook until sticky and caramelised.
INGREDIENTS:
  • 1 red cabbage (finely sliced)
  • 1 large Bramley apple (peeled & diced)
  • 4 rashers Organic Smoked Streaky Bacon (finely sliced)
  • 2 sprigs fresh rosemary
  • 1 teaspoon fennel seeds
  • 4 tablespoons balsamic vinegar
  • Juice of 1 clementine 
METHOD:
  1. Sauté the bacon in a casserole dish for 1 minute on a high heat, then add the rosemary and fennel seeds and cook for a further minute in the fat
  2. Add the red cabbage, apple, rosemary leaves and balsamic vinegar to the dish and stir – then add the clementine juice to deglaze the pan
  3. Season with salt and pepper, add 50ml water and cook either on the hob on a medium heat or in the oven for 30 minutes – stirring often until sticky and cooked

Once cooked, keep your festive side dishes covered and warm until ready to serve. Dish up onto large warmed platters and garnish with fresh cranberries, sage leaves and candied orange slices for a Christmas meal which will taste as good as it looks.
