120 Day Dry-Aged Trenchmore Wagyu x Sussex
Selected from a wonderful Trenchmore Wagyu x Sussex Body a while ago now, this is the longest aged piece we have done so far on the Bespoke Editions page. A truly lovely piece of meat, the Wagyu x Sussex is reared on Trenchmore farm just outside Brighton by our friends Andy and Rachel.
They only feed their cattle what they grow on the farm including apple pomace from their cider production (the cider is bloody good too!). The cattle are pasture raised their entire lives until winter when the clay ground they inhabit becomes too dangerous to outwinter - a really great example of working with nature alongside ethics.
Sadly as this piece was selected by the team from the body we lost the tag when we broke down the forequarters (annoying!) so you'll just have to take our word for it on this one. Kill date of 29.01.21, as this is released it will be just coming up to 120 days.
