We selected 4 prime ribs for this week's edition, cutting them down from their full rib with cap on last week and ageing the pure steak meat for a week solo - these will pack a punch! Taken from two 10 year old beasts, reared in the Spanish hills on pasture, these cattle have lived an exceptional life, as ethical as can be.
